Betties Favorite Recipe: Jumbo Stuffed Shells
Ingredients:
- 1 box of jumbo shells
- 2 jars of red pasta sauce
- 24 oz of ricotta cheese
- 16 oz of mozzarella cheese (save 3/4 cup)
- 1 cup of Parmesan
- 1/2 tbsp of fresh parsley
- 2 eggs
Directions:
- Cook shells as directed on box
- Prepare baking dish by pouring one jar of pasta sauce in the bottom
- Mix together cheese, parsley, and eggs in a large bowl
- Stuff cooked shells with spoonfuls of cheese mixture & place in the baking dish in rows on top of the sauce
- Pour on the rest of the sauce & top with the rest of the mozzarella cheese
- Bake at 325 degrees for 45 mins
